    Title: Cream Of Spinach Soup

    MMMMM----------------------------BASE---------------------------------
    1 Carrot; chopped
    1 Onion; chopped
    1 Clove garlic; minced
    1 Potato; cubed

    MMMMM--------------------------SPINACH-------------------------------
    1 lb Spinach
    1 c Water

    MMMMM----------------------------ROUX---------------------------------
    1/3 c Flour
    1/3 c Butter; melted
    2 c Milk

    MMMMM-------------------------SEASONING------------------------------
    1/2 ts Salt; or more
    Pepper
    1/2 ts Basil
    1 pn Nutmeg
    1 pn Thyme -OR-
    Any fresh herb like parsley
    -or marjoram

    Takes 40 minutes to prepare.

    Cover base ingredients with water. Steam until tender. Purée in its
    own water.

    Steap spinach until wilted. Purée.

    Make a roux by whisking flour into melted butter. Whisk in milk and
    cook over very low heat, stirring until thickened.

    Ass the spinach to the roux, along with seasoning ingredients.

    Add the vegetable purée to the soup. Adjust seasoning and, if too
    thick, add milk. Heat on very low flame and stir until smooth,
    creamy, green, and fragrant.
