Title: Hawaiian Hula Chicken

Yield: 3 servings
2 tb Soy sauce
1 tb Light brown sugar
1 ts Minced fresh ginger
3 cl Garlic; minced
1/4 ts Black pepper
3 Boned, skinned chicken
- breasts
1 Scallion; sliced
In a resealable plastic bag, combine soy sauce, brown
sugar, ginger, garlic, and pepper; mix well. Add chicken
to marinade, seal, and refrigerate at least 4 hours, or
overnight.
Coat a grill pan or skillet with cooking spray; heat
over medium heat. Add chicken, discarding marinade, and
cook 5 to 6 minutes per side, or until no longer pink in
center. Garnish with scallion and serve.
