Title: Sweet Potato Cinnamon Bread

Yield: 4 servings
3 1/2 c A-P flour
2 2/3 c Sugar
2 ts Baking soda
1 ts Salt
1/2 ts Baking powder
1 1/2 ts Ground cinnamon
1 ts Ground ginger
1/2 ts Ground cloves
4 lg Eggs; room temp
2 c Mashed sweet potatoes
2/3 c Oil
2/3 c Milk
1 1/2 c Raisins
1 c Chopped walnuts
Set oven @ 350ºF/175ºC.
In a large bowl, whisk the first 8 ingredients. In
another bowl, whisk eggs, sweet potatoes, oil and milk
until blended. Add to flour mixture; stir just until
moistened. Fold in raisins and walnuts.
Transfer to 4 greased 5-3/4" X 3" x 2" loaf pans. Bake
35-40 minutes or until a toothpick inserted in center
comes out clean. Cool in pans 10 minutes before removing
to wire racks to cool.
