Title: Coffee-Chocolate Cake

2 c Sugar
1 c Oil
1 c Whole milk
1 c Brewed coffee; room temp
2 lg Eggs; room temp
1 ts Vanilla extract
2 c A-P flour
3/4 c Baking cocoa
2 ts Baking soda
1 ts Baking powder
1 ts Salt
MMMMM--------------------BUTTERCREAM FROSTING-------------------------
1 c Butter; softened
8 c Confectioners' sugar
2 ts Vanilla extract
1/2 c (to 3/4 c) whole milk
In a large bowl, beat the sugar, oil, milk, coffee, eggs
and vanilla until well blended. Combine the flour,
cocoa, baking soda, baking powder and salt; gradually
beat into sugar mixture until blended.
Pour into 2 greased and floured 9" round baking pans.
Bake at 325oF/165oC for 25-30 minutes or until a
toothpick inserted in the center comes out clean. Cool
in pans for 10 minutes before removing to wire racks to
cool completely.
For frosting, in a large bowl, beat butter until fluffy.
Beat in confectioners' sugar and vanilla. Add milk until
frosting reaches desired consistency. Spread frosting
between layers and over top and sides of cake.
