your request. so, I thought I'd post these recipes I created for a natural food deli I worked for. (For those in Milwaukee, it was Outpost.)
I thought it looked like natural food store deli fare...

Title: Poblanos Stuffed With Cumin And Orange Scented Rice
Categories: Stuffed veg, Vegetarian
Yield: 4 Servings
2 Oranges; well scrubbed
2 tb Olive oil
1 sm Onion; minced
1 sm Carrot; grated
1 tb Ground cumin
2 c Cooked brown rice
Salt
Black pepper; freshly ground
8 Poblano chiles;
- lightly roasted
1/4 c Almonds; chopped
This symphony of flavors is sure to make this dish the center of
attention at the dinner table.
Preheat the oven to 350?F. Grate 2 tb zest from the oranges and set
aside in a small bowl. Remove the remaining peel and pith from the
oranges and discard. Coarsely chop the oranges, removing any seeds,
if necessary, and add to the zest along with any juice. Set aside.
Heat 1 tb olive oil in a large skillet over medium heat. Add the
onion & carrot, cover, and cook until softened, about 5 minutes. Add
the cumin, rice, orange mixture, and salt & pepper to taste. Mix well.
Lightly oil a baking dish. Cut a lengthwise slit in each roasted
chile and remove the seeds. Spoon the stuffing mixture into the
chiles and sprinkle with the almonds. Arrange the stuffed chiles in a
single layer in the prepared dish. Drizzle with the remaining 1 tb
olive oil and bake until hot, about 30 minutes. Serve hot.
