Title: Italian Sausage With Parsley And Cheese

Yield: 2 Pounds
2 lb Pork butt; coarsely ground
1/4 lb Pork fat; coarsely ground
3 tb Fresh parsley; chopped
3 cl Garlic; crushed
1 ts Salt
1/4 ts Black pepper; freshly ground
4 tb Dry white wine
1/2 c Parmesan cheese;
- freshly grated
This is a bit lighter than the sausages with red pepper flakes and I
think this is a perfect sausage for a nice dinner with friends.
Put all the ingredients together, and mix them well. Let rest an hour
and mix again. Stuff into casings.
