      Title: Eggplant Kulambu
 Categories: Indian
      Yield: 1 Batch
 
      1    Eggplant
    1/2 ts Fenugreek seed
      1 ts Curry powder with chili
           Ghee
    1/2 ts Tamarind paste
    1/2 sm Onion; diced
      1 c  Coconut milk
           Salt
           Curry leaves
    1/2 c  Water
 
  Saute eggplant in ghee until cooked and remove it from the ghee. In
  another 1 tb ghee fry the onion and fenugreek seed and curry leaves.
  Add the curry powder, salt, and eggplant. Mix tamarind and water and
  add this to mixture. Simmer for 10 minutes. Add milk and simmer until
  thick like a gravy. Serve over rice.
