      Title: Squash Quiche Italiano
 Categories: Dinner pies, Italian
      Yield: 6 Servings
 
      2 c  Zucchini or other summer
           - squash; thinly sliced
      1 c  Onion; thinly sliced
      1 cl Garlic; minced
      3 tb Olive oil
      2 ts Salt
      2    Fresh tomatoes;
           - peeled, chopped
      1 c  Tomato sauce
    1/4 ts Oregano
    1/4 ts Tarragon
      2 c  Cottage cheese (small curd)
      3    Eggs
    3/4 c  Milk
    1/4 c  Mozzarella; grated
      1    Pie crust (10")
 
  Saute squash, onion, and garlic in olive oil. Seasono with salt.
  Remove. Simmer tomatoes, sauce, and remaining seasonings until
  tomtatoes are soft. Mix well cottage cheese, eggs, and milk. Place
  squash mixture in pie shell. Add egg mixture and 4 tb tomato sauce.
  Bake for 35 minutes in preheated 350?F oven. Sprinkle on grated
  Mozzarella and return to oven until cheese melts. Serve quiche with
  remaining tomato sauce.
