    Title: Puerto Rican Pumpkin Pudding

    Yield: 1 Batch

    2 lb Pumpkin; cooked, mashed
    1 tb Salt
    3 Eggs
    2 tb Margarine
    1/2 ts Cinnamon
    1/2 ts Nutmeg
    1/3 c Flour
    1/3 c Sugar
    1/3 c Cream

    Fold pumpkin into combined remaining ingredients. Pour mixture into
    buttered baking dish or individual ramekins. Bake in a 400?F oven for
    45 minutes.
