Title: Small-Batch Pancakes

Yield: 8 Pancakes

1 1/4 c A-P flour
1 tb Sugar
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1 lg Egg; lightly beaten
1 1/4 c Buttermilk
2 tb Oil
1 c Blueberries; opt

In a large bowl, combine flour, sugar, baking powder,
baking soda and salt. In a separate bowl, combine egg,
buttermilk and oil; stir into dry ingredients just until
blended. If desired, fold in blueberries.

Heat griddle over medium heat. Lightly grease griddle.
Pour batter by 1/4 cupfuls onto griddle; cook until
bubbles on top begin to pop and bottoms are golden
brown. Turn; cook until second side is golden brown.
