Title: Mint-Cucumber Tomato Sandwiches

3 tb Butter; softened
8 sl Sourdough bread
1 lg Cucumber; thin sliced
2 md Tomatoes; thin sliced
1/4 ts Salt
1/8 ts Pepper
1/4 c Fresh mint leaves

Spread butter over 4 slices of bread. Layer with
cucumber and tomatoes; sprinkle with salt, pepper and
mint. Top with remaining bread. If desired, cut each
sandwich into quarters.
