      Title: White Lima Bean Salad With Garam Masala Dressing

      Yield: 2 Servings
  1 1/2 c  Dry white lima beans
      4 c  Water; for soaking beans
      2 c  Water; mixed with:
      1 ts Salt; plus:
      1 ts Oil; for cooking beans
    1/2 c  Cherry tomatoes;
           - halved or quartered
    1/2 c  Fresh white corn; from 1 ear
           Lettuce leaves; shredded
      2    Scallions; finely chopped
MMMMM-------------------GARAM MASALA DRESSING------------------------
      3 tb Fresh lime juice
      4 tb Extra virgin olive Oil
      1 ts Garam masala
      2 tb Red onions or shallots;
           - finely chopped
      1    Thai green chilli;
           - finely chopped
      2 cl Garlic; minced
    1/2 ts Fresh ginger; minced
      1 tb Sour cream
  1 1/2 ts Red pepper flakes;
           - adjust to taste
      3    Fresh mint leaves; up to 4,
           - minced
           Salt; to taste
  If using raw beans, soak them in a big bowl in 4 cups of water for at
  least 6 hours or overnight. Once soaked, drain the water & discard it.
  Beans In Pressure Cooker:
  Pressure cook the beans until tender in 2 cups of water mixed with 1
  ts oil & 1 ts salt for 10 minutes on high or 2 whistles. Once you
  hear the second whistle,remove from stove top and wait until the
  cooker releases all the steam.
  Note:
  Since each pressure cooker is different, adjust time as per your
  appliance.
  Beans On Stove Top:
  In a heavy bottomed pot with lid, add the soaked beans along with
  salt and oil. Cover & let the water come to boil. About 5 minutes.
  Reduce the heat to minimum and let simmer for 20 minutes or so until
  tender.
  Once beans are cooked, drain and let cool. You can reserve the water
  for adding to curries, rice pilaf, or stews, etc.
  Salad:
  In a big bowl, toss the cooked, cooled & cooked beans with all the
  vegetables and combine gently. Refrigerate until ready to serve.
  Garam Masala Dressing:
  In a small jar with a lid, add all the ingredients listed except salt
  & sour cream. Tighten the lid & shake well until an emulsion is
  formed. Refrigerate until ready to serve.
  To Serving:
  Add salt & sour cream to the dressing, shake again to mix and pour
  over the beans and vegetables. Toss well, add some grated cheese if
  you like and serve cold.
