      Title: Roasted Peach & Candied Habanero I Scream

      Yield: 1 Quart
 
      2 c  Sugar
      2 c  Water
      5    Sliced habaneros
      1    Ripe peach; stoned
           Salt
      2 c  Heavy cream
      1 c  Whole milk
 
  Combine sugar and water in a pot. Heat on high until it
  reaches 220ºF/103ºC, then add 5 habaneros, sliced into
  thin rings. Cook for 20 minutes without stirring.
  
  Remove from heat and let cool, leaving the habaneros in
  the syrup overnight. Strain the syrup into a jar and save
  it.
  
  Place habanero rings on wax paper covered with sugar and
  allow to dry for 2-3 days.
  
  Cut the peach in half, sprinkle each half with salt and
  roast in a preheated 350ºF/175ºC oven for 1 hour.
  
  Once cool, pull the skin off then puree the peach.
  
  Combine the peach puree, reserved syrup, milk, cream and
  most of the habanero candy (diced) into an ice cream maker
  and make ice cream.
  
  Serve topped with habanero candies and peach slices.
