Retro Supper Club Recipes

      Title: Cobb Salad

      Yield: 4 servings
 
    1/4 c  Red wine vinegar
      2 ts Salt
      1 ts Lemon juice
      1 sm Garlic clove; minced
    3/4 ts Coarse ground pepper
    3/4 ts Worcestershire sauce
    1/4 ts Sugar
    1/4 ts Ground mustard
    3/4 c  Canola oil
    1/4 c  Olive oil
MMMMM---------------------------SALAD--------------------------------
  6 1/2 c  Torn romaine
  2 1/2 c  Torn curly endive
      4 oz Bunch watercress; trimmed,
           - divided
      2 c  Diced, cooked chicken
           - breast
      2 md Tomatoes; seeded, chopped
      1 md Ripe avocado; pitted, peeled
           - chopped
      3 lg Hard-boiled eggs; chopped
    1/2 c  Crumbled blue or Roquefort
           - cheese
      6 sl Bacon; cooked, crumbled
      2 tb Minced fresh chives
 
  In a blender, combine the first 8 ingredients. While
  processing, gradually add canola and olive oils in a
  steady stream.
  
  In a large bowl, combine the romaine, endive and half of
  the watercress; toss lightly. Transfer to a serving
  platter. Arrange the chicken, tomatoes, avocado, eggs,
  cheese and bacon over the greens; sprinkle with chives.
  Top with remaining watercress. Cover and chill until
  serving.
  
  To serve, drizzle 1 cup dressing over salad. Serve with
  remaining dressing if desired.
