Title: Flavorful Caprese Sandwich

Yield: 4 servings

11 oz French bread baguette
2 lg Heirloom tomatoes; sliced
8 oz Fresh mozzarella cheese;
- sliced
1/2 ts Sea salt
1/2 ts Coarse ground pepper
4 tb Olive oil
2 tb Balsamic glaze; opt
16 Fresh basil leaves

Slice baguette in half lengthwise; cut into 4 equal
portions to make 4 sandwiches. Optional: Toast baguette
halves, cut side down, in a hot dry skillet until
lightly toasted.

Assemble sandwiches by layering tomato slices and sliced
mozzarella cheese on baguette bottoms. Drizzle with
olive oil and if desired, balsamic glaze. Sprinkle with
salt and pepper. Layer with fresh basil leaves. Top each
with other baguette half.
