      Title: Carrot Nut Bake
 Categories: Vegetarian
      Yield: 8 Servings
  2 1/2 tb Butter
    1/3 c  Oil
    1/2 tb Mild Madras curry powder
      2 tb Mugi miso
      2 tb Tomato paste
      4 c  Carrots; grated
      2 c  Bread crumbs
      3 tb Mixed dried herbs
  1 1/2 c  Unsalted peanuts; roasted,
           - minced
    1/2 c  Nutritional yeast
           Salt
           Black pepper;
           - freshly milled, to taste
  Melt butter with oil, spices, miso, and tomato paste. Mix carrots with
  bread crumbs, herbs, peanuts, and nutritional yeast and stir in the
  melted butter mixture. Add salt and pepper to taste. Knead to a paste
  and press 1-1/2" deep into an oiled baking pan. Bake at 350?F for 25
  to 30 minutes. Freezes well.
