      Title: Mango Chicken Thighs w/Basil-Coconut Sauce

      Yield: 4 servings
 
      4    Boned, skinned chicken
           - thighs
    1/2 ts Salt
    1/4 ts Pepper
      1 tb Olive oil
      3 cl Garlic; minced
      1 tb Minced fresh gingerroot
 13 2/3 oz Can coconut milk
      1 md Mango; peeled, chopped
      4    Green onions; sliced
    1/2 c  Thin sliced fresh basil;
           - divided
    1/4 c  Miso paste
      2 ts Sriracha chile sauce
      2 c  Cooked jasmine rice
      2 md Limes; quartered
 
  Sprinkle chicken with salt and pepper. In a large
  skillet, heat oil over medium heat. Brown chicken on
  both sides. Add garlic and ginger; cook 1 minute longer.
  
  Stir in coconut milk, mango, green onions, ΒΌ cup basil,
  miso paste and chili sauce. Cook and stir until sauce is
  slightly reduced, about 20 minutes. Sprinkle with
  remaining 3/4 cup basil. Serve with rice and limes.
