      Title: Chimichurri Chicken

      Yield: 4 servings
 
    1/2 c  Olive oil
      4 tb Minced fresh parsley
      3 tb Red wine vinegar
      6 cl Garlic minced
    1/2 ts Dried oregano
    3/4 ts Salt
    1/4 ts Pepper
    1/4 ts Crushed red pepper flakes
  1 1/2 lb Boned, skinned chicken
           - thighs
 
  In a large bowl, whisk together olive oil, parsley, red
  wine vinegar, garlic, oregano, salt, pepper and crushed
  red pepper flakes. Reserve half the chimichurri sauce
  for serving; refrigerate. Add chicken to large bowl with
  remaining chimichurri; toss to coat. Cover; refrigerate
  at least 30 minutes.
  
  Remove chicken, discard marinade. Grill, covered, over
  medium-high heat, 4-5 minutes per side.
  
  Serve with reserved sauce.
