2 tb Fresh parsley; chopped
1/2 ts Marjoram
1/2 ts Sage
1/4 ts Thyme
1/2 ts Paprika
1/2 ts Ground coriander
1 tb Butter
2 c Cooked butter beans; soft
1/3 c Sour cream
Salt & pepper; to taste
Fry the herbs and spices gently in the butter for 1 to 2 minutes. Add
the beans, mashing them into the herbs. Add sour cream and re-heat
gently. Season to taste. This mash can be eaten with a grain or used
as a pie crust or sandwich filling.
