8 Tamales
1/2 c Cheddar cheese; grated
2 c Chicken; boiled, chopped,
- reserve stock
1 ts Salt
1 c Tomato paste
2 ts Chili powder
1 c Canned corn; drained
1 c Chicken stock; strained
1 c Ripe olives; chopped
Slice tamales lengthwise and line bottom and sides of a casserole
dish with them. Combine the remaining ingredients except the
cheese--mix well. Pour into the casserole. Bake for 1 hour at
350?F--remove and sprinkle top with cheese--then bake until cheese
is melted.
