      Title: Loaded Mexican Pizza
 Categories: Breads, Chilies, Vegetables, Herbs, Cheese
      Yield: 8 servings
 
     15 oz Can black beans; rinsed,
           - drained
      1 md Red onion; chopped
      1 sm Yellow bell pepper; chopped
      3 ts Chilli spice mix
    3/4 ts Ground cumin
      3 md Tomatoes; chopped
      1    Jalapeno; seeded, fine
           - chopped
      1 cl Garlic; minced
      1    Prebaked 12" thin pizza
           - crust
      2 c  Chopped fresh spinach
      2 tb Minced fresh cilantro
           Hot pepper sauce
    1/2 c  Shredded Cheddar cheese
    1/2 c  Shredded Pepper=Jack cheese
 
  In a small bowl, mash black beans. Stir in the onion,
  yellow pepper, chilli spice and cumin. In another bowl,
  combine the tomatoes, jalapeno and garlic.
  
  Place crust on an ungreased 12" pizza pan; spread with
  bean mixture. Top with tomato mixture and spinach.
  Sprinkle with cilantro, pepper sauce, cheddar cheese and
  pepper Jack cheese.
  
  Bake @ 400ºF/205ºC for 12-15 minutes or until cheese is
  melted.
