      Title: Indian Split Pea Soup (Dal)

      Yield: 6 Servings
      2 c  Uncooked yellow split peas
      8 c  Water or stock
      2 tb Sunflower oil
      1 c  Onion; diced
      4 cl Garlic (1-1/2 ts);
           - up to 5 cl, minced
      1 tb Fresh ginger; minced
  1 1/2 c  Kale or spinach; chopped
    1/4 ts Ground cumin
    1/4 ts Griound coriander
    1/2 ts Turmeric
    1/8 ts Cayenne pepper
      1 ts Salt
  Was peas. Add to water or stock in a 3 qt soup pot. Bring to a boil
  and cook on low heat for 45 minutes, hald covered with a lid, stirring
  occasionally.
  Heat the oil in a frying pan and sauté the onions, garlic, and ginger
  until lightly browned and tender. Add to split peas along with all the
  remaining ingredients. Lower heat to simmer, cover, and continue to
  cook 30 minutes more, stirring occasionally.
