      Title: Spinach Feta Quiche
 Categories: Dinner, Pies
      Yield: 6 Servings
      6 c  Fresh spinach leaves; packed
      1    Unbaked pie shell (10")
    1/4 ts Basil
      1 c  Feta cheese; grated or
           - crumbled
  1 1/2 c  Cheddar cheese; grated
      1 tb Unbleached white flour
      4    Eggs
  1 1/2 c  Light cream
      1 ds Paprika
  Preheat oven to 400°F. Steam spinach, press excess water out, and
  chop. Spread spinach on pie shell and sprinkle basil over it. Mix
  together feta and cheddar cheeses in medium-sized bowl. Toss flour
  into cheeses and spread over spinach in pie shell. Beat eggs well,
  add cream, and pour over cheese. Sprinkle with a dash of paprika.
  Bake 15 minutes. Lower heat to 325°F and bake 25 to 30 minutes
  longer, until golden and puffy. Allow to set 10 minutes before
  cutting.
