Title: Persimmon Salad

Yield: 8 Servings
3 Very ripe persimmons
1 1/2 c Pineapple juice -OR-
1 1/2 c Water; boiling
1 pk Lemon Jell-O
MMMMM--------------------------OPTIONAL-------------------------------
Crushed pineapple
Slivered pecans
Sieve persimmons. Boil liquid and add Jell-O. Stir well and add other
ingredients, if desired. Chill. Serve on crisp lettuce leaves. Top
with almonds.
