      Title: Mexican Street Corn Salad (Esquites)
 Categories: Vegetables, Cheese, Herbs, Chilies, Citrus
      Yield: 6 servings
 
      2 tb Olive oil
      3 c  Corn niblets; thawed
    1/2 c  Mayonnaise
    1/3 c  Crumbled Cotija cheese
    1/3 c  Chopped fresh cilantro
      2    Green onions; thin sliced
      1    Jalapeno pepper; seeded,
           - minced
      1 tb Lime juice
      2 cl Garlic; minced
    1/2 ts Chilli spice mix
    1/4 ts Smoked paprika
    1/8 ts (ea) salt & pepper
           Lime wedges; opt
 
  In a large skillet, heat oil over medium-high heat. Add
  corn; cook and stir until lightly charred, 8-10 minutes.
  Transfer to a large bowl. Stir in remaining ingredients.
  Serve warm. If desired, garnish with additional minced
  cilantro, crumbled Cotija cheese and lime wedges.
