    Title: Julius Dithers Ball Buster Hoagy/Sub/Grinder

    Yield: 4 Servings

    MMMMM-------------------------MEATBALLS------------------------------
    2 lb Hot Italian sausage
    1/2 c Bread crumbs
    1/2 c Thin sliced green onions
    4 tb Grated Parmesan or Asiago
    2 lg Eggs

    MMMMM---------------------------SAUCE--------------------------------
    2 tb Extra-virgin olive oil
    4 cl Garlic; crushed and chopped
    1/2 ts Crushed red pepper flakes
    2 tb Flat-leaf parsley; chopped
    1/2 ts Dried oregano
    28 oz Can crushed tomatoes
    14 oz Can chunky style crushed
    - tomatoes
    Salt & fresh ground pepper

    MMMMM--------------------------ASSEMBLY-------------------------------
    4 Semolina crusty sub rolls;
    - sesame seeds optional
    2 1/2 c Shredded Provolone or
    - Italian 4-cheese blend
    Shredded sweet basil or
    - arugula leaves; garnish

    MEATBALLS: In medium bowl, add sausage, bread crumbs,
    onions, cheese and egg. Mix thoroughly. Shape into 24
    meatballs.

    Cook over med-low heat, turning frequently, until brown.

    5 MINUTE MARINARA: Heat a medium saucepan over medium
    heat. Add oil and garlic. When garlic starts sizzling,
    add herbs and crushed pepper. Allow oil to infuse for
    half a minute, then stir in the tomatoes and season sauce
    with salt and pepper. Bring sauce to a bubble, reduce
    heat, and simmer until meatballs are ready.

    ASSEMBLY: Combine meatballs and sauce and pile into sub
    rolls, 6 meatballs per sub. Top with shredded cheese and
    place under subs under broiler to melt cheese.
