Title: Leek, Potato, And Kale

1 bn Kale (cavolo nero
-preferred)
1 Leek
3 cl Garlic; up to 4
2 md Potatoes; up to 3
60 ml Vegetable stock
2 Fresh thyme; up to 3
Olive oil
400 g Can white beans (optional)
Slice the leek lengthwise then chop. Wash the pieces using a
collander or salad spinner.
Heat the olive oil in a large saute pan and cook the leek until soft.
In the meantime, wash and cut the potatoes into 1 to 1.5 cm cubes.
Chop the garlic.
Once the leek is soft, add the potatoes, garlic, and sprigs of thyme
and cook, covered, for about 5 minutes while you prepare the kale.
Wash the kale, remove and discard the stems, then chop the leaves.
Add the chopped kale and vegetable stock to the pan (and beans if
you're adding them) then replace the lid. Simmer on low heat until
the potatoes and kale are tender.
