MMMMM------------------------SWEET ROLLS-----------------------------
1 c Warm whole milk (110ºF/43ºC)
1/4 oz Env active dry yeast
2 tb Granulated sugar
3 tb Unsalted butter; room temp
1 lg Egg
3 c A-P flour; more for rolling
1 ts Kosher salt
MMMMM--------------------------FILLING-------------------------------
1 c Frozen blueberries
1/4 c Granulated sugar
1 tb Cornstarch
MMMMM------------------------LEMON GLAZE-----------------------------
Grated zest of 1 lemon
3 tb Fresh lemon juice
1 tb Unsalted butter; melted
1 3/4 c Powdered sugar
pn Kosher salt
Prepare the Dough: Combine warm milk, yeast, and sugar.
Let it sit until foamy. Add butter, egg, flour, and
salt. Knead until smooth and let it rise for about an
hour.
Make the Filling: Mix blueberries, sugar, and
cornstarch.
Assemble the Rolls: Roll out the dough, spread the
blueberry filling, and roll it up. Cut into rolls and
place in a baking dish. Let them rise again.
Bake @ 350ºF/175ºC until golden brown.
Make the Glaze: Mix lemon zest, lemon juice, melted
butter, powdered sugar, and salt. Drizzle over the warm
rolls.
