Few foods gained such widespread appeal as the simple, yet explosive
snack food known as popcorn. Its airy mystique unmistakable flavor
and curious shape has resulted in incurable addictions. Anxiously I
listen to the bombarding kernels awaiting the moment when I can grip
my fingers around the puffed morsels and finally stuff a handful
    akwardly into my mouth.

The delicate flavor of popcorn can be easily destroyed by burning or
oversalting. After many years of popping, I have found the following
    method most successful:

Coat the bottom of a large pot generously with oil. Place on heat and
drop one defenseless kernel into the oil. When it pops, it is just
the right temperature to add more kernels. Add only enough to layer
the bottom one kernel thick. Replace the lid and wait patiently. When
the popping subsides, let out a little steam or shake the pot and
replae on eat until the popping stops--immediately remove from heat
and enjoy it perfectly plain or coated with any of the topping
    combinations listed in this recipe.

    Title: Dirty Dave's Chilli Popcorn
    Categories: Five, Snacks
    Yield: 1 Batch

    1/4 c Chilli oil/grease *
    1 c Unpopped popcorn
    Salt

    * The orange oil you spoon off of your chilli that is
excess to the needs of a good bowl of red. Save it in
the icebox until needed. When it has cooled/set up it's
    "grease". Bv)=

Melt the chilli oil in the popping vessel. **

When the grease is hot enough (350ºF/175ºC or more) add
the unpopped kernels of popcorn. Shake pan occasionally
    to prevent sticking and burning.

When popping has stopped pour into a bowl or paper bag,
add salt to taste and enjoy!

** NOTE: air poppers will not work for this. A 'Stir-
Crazy' popper works well - and you don't have to shake
    the pan.

Have plenty of napkins handy. That orange chilli-flavored
popcorn will stain your shirt or pants if you wipe your
    fingers on them.

If you made HOT chilli - you will have very spicy popcorn.
If you made a milder batch of chilli you will have nicely
chilli-flavoured popcorn with a moderate bite.

Someone gave me a jar of expired "scampi seasoning mix." It has dairy
powder and lots of garlic flavor. I think it goes really well on
popcorn. It does give me garlic breath.
