    23 January 1849 - ELIZABETH BLACKWELL BECOMES THE FIRST WOMAN TO RECEIVE
    A MEDICAL DEGREE: At a graduation ceremony at a church in Geneva, New
    York on January 23, 1849, Geneva Medical College bestows a medical
    degree upon Elizabeth Blackwell, the first woman in the United States to receive one. Despite the near-uniform opposition of her fellow students
    and medical professionals, Blackwell pursued her calling with an iron
    will and dedicated her life to treating the sick and furthering the
    cause of women in medicine.

    Blackwell's family was remarkable by any standard. Her father was a
    staunch abolitionist and both her brother and his wife were active in
    the women's suffrage movement. Another sister-in-law was the first
    female minister to be ordained in a mainstream Protestant denomination,
    and Elizabeth's younger sister Emily also studied medicine. A gifted
    student, Elizabeth felt compelled to become a doctor after a
    conversation with a dying friend, who told her that her ordeal had been
    that much worse because her physicians were all men.

    Title: Diet Doctor's No-bean Keto Chilli
    Categories: Beef, Herbs, Vegetables, Chilies
    Yield: 4 servings

    MMMMM--------------------------CHILLI--------------------------------
    3 tb Olive oil
    2 oz Yellow onion; chopped
    2 cl Garlic; chopped
    2 tb Chilli spice mix
    2 ts Chipotle or smoked paprika
    - powder
    2 ts Ground cumin
    1 1/4 lb Ground beef
    4 oz Fresh tomato, diced
    2 tb Tomato paste
    2 Fresh jalapenos; sliced
    1 c Beef broth
    Salt & ground black pepper

    MMMMM-------------------------TO SERVE-------------------------------
    3/4 c (3 oz.) shredded cheese
    3/4 c Dairy sour cream
    1 (7 oz.) avocado; peeled,
    - seeded, sliced
    2 lg Fresh jalapenos; sliced thin
    2 tb Fine chopped fresh chives or
    - scallions

    Heat the olive oil in a large pot over medium heat. Add
    the onion and garlic and fry until soft.

    Add the chilli spice, chipotle powder or smoked paprika
    powder, and cumin, stirring for a minute or so to
    extract the flavor from the spice.

    Add the ground beef. Use a spatula to crumble the meat
    and cook until no longer pink, about 10-15 minutes.

    Add the tomatoes, tomato paste, jalapenos, and broth.
    Bring to a boil, and then reduce the heat to medium-low.
    Cover and simmer for at least 10 minutes, stirring
    occasionally. Season with salt and pepper, to taste.

    For serving, top the chilli with shredded cheese, sour
    cream, avocado, jalapenos, and chives/scallions.

    HOW TO MAKE CHILLI IN A CROCK POT: Follow steps one to
    three. Add the browned meat, tomatoes, tomato paste,
    jalapeNos, and broth to the slow cooker. Cover with lid
    and cook on low heat for five to six hours.

    Title: Tuscan Keto Karma Chicken
    Categories: Poultry, Cheese, Vegetables, Wine, Herbs
    Yield: 4 Servings

    4 Boned, skinned chicken
    - breasts or thighs
    4 oz Goat cheese
    4 cl Garlic; pressed
    1/4 c Minced yellow onion
    8 tb Grass-fed, unsalted butter
    1/4 c Dry white wine
    1/4 c Fresh lemon juice
    4 Sun-dried tomato halves;
    - sliced
    8 Fresh basil leaves; chopped
    Olive oil
    Salt & pepper

    Coat each piece of chicken lightly with olive oil, then
    season with salt and pepper.

    Grill chicken for approximately 15-25 mins depending on
    the thickness and size of each chicken piece.

    Add 1 oz of goat cheese to each piece, then close the
    grill lid so the cheese can soften.

    Combine 1 TBS of butter with 1/4 cup onions and 4 freshly
    pressed garlic cloves in a pan.

    Simmer until onion and garlic are cooked.

    Add 1/4 cup of lemon juice and 1/4 cup of Dry white wine
    to the onion and garlic, stir together and simmer to
    reduce mixture by almost half. (4-5 mins)

    Cube/slice remaining 7 TBS of cold butter and add to the
    sauce, little by little.

    Add sun-dried tomatoes and let simmer for (2-3 mins) as
    you lower the heat, so that the sauce doesn't break.

    Add fresh chopped basil. Toss around in the sauce, then
    remove from heat and set aside.

    Remove chicken topped with goat cheese from the grill,
    plate, and spoon tuscan sauce equally on each piece.

    Enjoy with a side of zucchini noodles, or cauliflower
    garlic smashed potatoes!

    Diabetes is the reason I'm on Keto and I can completely manage my Type 2 with diet alone when on Keto. Something about the carbs that I just can't handle. Thanks for the new Keto recipe.

    I also an a Type II diabetic. I was so well controlled that my croaker
    rold me to lay off the meds and monitor my blood sugars closely as a
    trial toward management by diet and exercise only. So I watched my blood
    sugars creep slowly upward each day. We determined that I need a minimal
    dose (2 mg) of Amaryl/gilmeipiride to kickstart my metabolism each day.

    By eating a fairly normal diet and staying away from the sugared soft
    drinks my fasting sugars remainn in the 90 to 105 range and my A1C makes
    both the doc and the RD smile.

    I have not made this recipe for a number of reasons: 1 - I am single,
    living essentially alone and 2 - I can buy Banquet individual pot-pies
    for about a dollar each @ Sav-A-Lot. One of those done in my nuker for
    five minutes and I have a decent supper for one.

    Title: Kay Frederick's Keto Chicken Pot Pie
    Categories: Pies, Pastry, Vegetables, Poultry, Herbs
    Yield: 6 Servings

    MMMMM--------------------------FILLING-------------------------------
    1 tb Butter
    1/2 sm Yellow onion; chopped
    4 cl Garlic; thin sliced
    1 sm Carrot; chopped
    2 Ribs celery; chopped
    2 c Chicken broth
    1 tb Fresh thyme leaves
    1 ts Sweet paprika
    1/2 c Heavy cream
    3 c Rotisserie chicken
    1 c Green peas; thawed
    Salt & fresh ground pepper

    MMMMM---------------------------CRUST--------------------------------
    2 c Shredded mozzarella
    4 oz Cream cheese
    2 lg Eggs
    +=PLUS=+
    1 lg Egg
    +=BEATEN WITH=+
    1 tb Water
    2 1/2 c Almond flour
    2 ts Baking powder

    Set oven @ 425ºF/218ºC.

    MAKE FILLING: In a large ovenproof skillet over
    medium-high heat, melt butter. Add onion, garlic,
    carrot, and celery and cook, stirring, until softened,
    about 7 minutes.

    Stir in broth, thyme, and paprika and bring to a boil.
    Let simmer, 5 minutes, until vegetables are tender. Stir
    in heavy cream and simmer until thickened, about 2
    minutes. Add chicken and peas and toss to warm through
    and coat with the sauce, about 2 minutes. Season with
    salt and pepper. Remove from heat.

    MAKE CRUST: In a large microwave-safe bowl, melt
    together mozzarella and cream cheese. Add eggs and stir
    to combine, then stir in almond flour, and baking
    powder. Season with salt.

    Dollop crust mixture over the filling and smooth the top
    with a spatula. Using a knife, cut an X in the center of
    the crust, then brush with egg wash.

    Bake until crust is golden, about 25 minutes.
