    Title: Easy chocolate cake
    Categories: Nut-free, Vegetarian
    Yield: 1 Serving

    225 g Plain flour
    350 g Caster sugar
    85 g Cocoa powder
    1 1/2 ts Baking powder
    1 1/2 ts Bicarbonate of soda
    2 Free-range eggs
    250 ml Milk
    125 ml Vegetable oil
    2 ts Vanilla extract
    250 ml Boiling water
    200 g Plain chocolate, broken into
    -pieces
    200 ml Double cream

    Preheat the oven to 180C/160C Fan/Gas 4. Grease and line two 20cm
    sandwich tins.

    To make the cake, place all of the cake ingredients, except the
    boiling water into a large mixing bowl. Using a wooden spoon, or
    electric whisk, beat the mixture until smooth and well combined.

    Add the boiling water to the mixture, a little at a time, until
    smooth. (The cake mixture will now be very liquid.)

    Divide the cake batter between sandwich tins and bake in the oven for
    25-35 minutes, or until the top is firm to the touch, and a skewer
    inserted into the centre of the cake comes out clean.

    Remove the cakes from the oven and allow to cool completely, still in
    their tins, before icing.

    To make the chocolate ganache, heat the chocolate and cream in a
    saucepan over a low heat until the chocolate melts. Remove the pan
    from the heat, and whisk the mixture until smooth, glossy, and
    thickened. Set aside to cool for 1-2 hours, or until thick enough to
    spread over cake.

    To assemble the cake, run a round-bladed knife around the inside of
    the cake tins to loosen the cakes. Carefully remove the cakes from
    the tins.

    Spread a little chocolate ganache over the top of one of the chocolate
    cakes, then carefully top with the other cake.

    Transfer the cake to a serving plate, and ice the cake all over with
    the chocolate ganache, using a pallete knife.

    Here's another chocolate cake recipe:

    Title: Wonderful Chocolate Cake

    Yield: 1 Cake

    2 c All-purpose flour
    3/4 c Unsweetened cocoa powder
    2 c Granulated sugar
    2 ts Baking soda
    1 ts Baking powder
    1/4 ts Salt
    4 tb Buttermilk powder
    1 c Water
    9 oz Pureed prune baby food
    - (2 jars)
    1 ts Vanilla
    1 ts Almond flavoring or
    - butter flavoring
    2 Eggs or substitute
    1 c Water
    Orange Glaze:
    1 c Orange juice
    2 c Powdered sugar
    2 ts Orange zest; grated
    Glaze Variation:
    1 c Powdered sugar
    4 ts Milk; up to 5 ts
    1 1/2 ts Corn syrup
    1/4 ts Vanilla or bourbon whiskey

    Sift flour, cocoa powder, sugar, baking soda, baking powder, and
    salt into large mixing bowl. In medium bowl, combine buttermilk
    powder, prunes, flavorings, egg substitute, and water. Slowly pour
    moist ingredients into flour mixture, blending well.

    Spray two round 9" pans or one 9x13" rectangular pan with PAM
    spray. Fill with batter and bake in preheated oven at 350°F for 30
    to 35 minutes, or until cake tester comes out clean.

    There's just 1 cup of water that you mix in with the buttermilk
    powder. I know the way it was written, it could be confusing.

    Orange Glaze:

    Bring to a boil and pour over cake while hot.

    Glaze Variation:

    If the cake has already cooled off, try this glaze.

    Combine and drizzle over cooled cake.
