Title: Alexis' African Peanut Sweet Potato Stew

Yield: 8 Servings
28 oz Can diced tomatoes;
- undrained
1 c Fresh cilantro leaves
1/2 c Chunky peanut butter
3 cl Garlic; halved
2 ts Ground cumin
1 ts Salt
1/2 ts Ground cinnamon
1/4 ts Smoked paprika
3 lb Sweet potatoes; peeled, in
- 1" pieces
15 oz Can chickpeas; rinsed,
- drained
1 c Water
8 c Chopped fresh kale
Chopped peanuts & additional
- cilantro leaves; opt
Place the first 8 ingredients in a food processor;
process until pureed. Transfer to a 5 qt. slow cooker;
stir in sweet potatoes, beans and water.
Cook, covered, on low 6 - 8 hours or until potatoes
are tender, adding kale during the last 30 minutes.
If desired, top each serving with chopped peanuts
and additional cilantro.
Makes: 8 servings (2-1/2 quarts)
