Make the marinade by combining all the ingredients into a bowl. Place
the pork in the marinade, mix until well coated and allow to marinate
for at least 1 hour.
Heat the oil in a wok or skillet over medium high heat until hot.
Sear the marinated pork for 2 minutes on each side, until lightly
browned. Add the coconut juice and bring to a boil. Reduce the heat
to low and simmer uncovered for 30 to 45 minutes, skimming off any
foam that floats to the surface, until the pork is tender. Add the
eggs and simmer for another 15 minutes before removing from the heat.
Serve with hot fresh vegetables and steamed rice.
