• Cosmic Crisp Apples

    I've discovered a new (to me) variety of apple - the Cosmic Crisp. It's
    a cross between Honey Crisp and Enterprise varieties. It was developed
    by the University of Washington's "Tree Fruit Research and Extension
    Centre.

    I got my first one from my local Hy-Vee to add to my Arby's Chicken
    Salad copycat recipe. Oh, my. I have bought some recently jsut to have
    and eat. I may make an apple pie with some later when I get a bit more ambitious. According to my search engine the majority of the crop for
    this variety is shipped to Canadia.

    Here's a link to a taste-test done by Allrecipes. America's Test Kitchen
    also did an extensive test - but, they're behind a very onerous "Pay Wall"

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Apple Dumplings I
    Categories: Fruits, Pastry, Desserts
    Yield: 8 servings

    16 oz Tube refrigerated flaky
    - biscuit dough
    4 Apples; peeled, cored,
    - halved
    1 c White sugar
    1 c Water
    1/2 c Butter; melted
    2 ts Vanilla extract
    1/2 ts Ground cinnamon

    Set oven @ 350ºF/175ºC.

    Butter a 7" X 11" baking pan. Separate biscuit dough
    into 8 pieces. Flatten each piece of dough into a
    circle. Wrap one biscuit around each apple half and
    place, seam side down, in pan.

    In small bowl, combine sugar, water, melted butter and
    vanilla. Pour mixture over dumplings in pan. Sprinkle
    cinnamon on top. Bake 35 to 40 minutes, until golden.
    Serve hot.

    Yield: 8 dumplings

    Thanks for the heads up. We will look for it.
    Honey Crisp are by far one of the most expensive apples on the market.
    That may be because they taste so good and/or because they have a
    limited season (or so we are told).


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Ultimate Irish Apple Cake
    Categories: cake
    Yield: 8 Servings

    1/4 c Butter (room temp)
    1/4 c Brown sugar
    3/4 c White sugar
    2 lg Egg beaten (room temp)
    2 ea Granny smith apples *
    1/4 c Chopped walnuts (optional)
    1 ts Vanilla
    1/2 ts Baking powder
    1/2 ts Baking soda
    1/2 ts Salt
    3/4 ts Cinnamon
    3/4 ts Nutmeg
    1 c AP flour

    MMMMM--------------------------CRUMBLE-------------------------------
    2 oz Vanilla sugar
    2 oz AP flour
    2 oz Butter

    This is a traditional Irish apple cake and is like a spice cake with
    the extra addition of apples.

    Preheat oven to 350 (Used convection oven - showed 325)

    Grease 8 inch square cake pan

    * I tested recipe with diced apples, will try sliced next time.

    In large bowl, cream butter and suger together until fluffy. Add egg,
    apples, nuts (if using), vanilla and stir well

    Shift dry ingredients and mix together. Mix with wet ingredients

    CRUMBLE:

    Mix all ingredients together forming rough crumbs. Set aside.

    Pour the batter into the pan. Sprinkle crumbs evenly over top of cake.

    Bake about 40 to 50 minutes or until the cake is lightly browned and a
    toothpick inserted into the center comes out clean.

    Remove from oven and let cake set in pan for 5 minutes. Remove to
    plate.

    Serve warm or at room temperature with whipped cream or vanilla ice
    cream.

    Testing for St Patricks day gift.

    Turned out very nice. Will make again. The above shows changes I
    will try next time. Froze half of the cake to see how it turns out.

    These are currently U$1.99/lb at my local HyVee Average weight is about .6 lb (U$1.29 per ea) I ate one yesterday in place of lunch. Bv)=

    Title: Bacon Apple Pie
    Categories: Pies, Desserts, Fruits, Pork
    Yield: 6 Servings

    Pastry for a 9" pie; store
    - bought OK
    3/4 c (packed) brown sugar
    2 tb Cornstarch
    1 ts Ground cinnamon
    1/2 ts Fresh grated nutmeg
    1/2 ts Ground cardamom
    1/4 ts Ground cloves
    6 c Cored, peeled, sliced sweet
    - apples; 1/2" thick
    8 sl (to 12 sl) uncooked thick
    - cut applewood-smoked bacon

    Set oven @ 350+|F/175+|C.

    Place the pie shell on a sturdy baking sheet and set
    aside.

    In a large bowl, whisk the brown sugar, cornstarch,
    cinnamon, nutmeg, cardamom and cloves together until
    blended. Add the apples and toss to coat. Dump the
    spiced apple slices into the pie shell, including any
    sugar and juices that have accumulated in the bowl.

    Weave the uncooked bacon on top of the pie filling,
    starting from the center and working your way out to the
    edges. For a lattice topping you should have an over-
    under pattern with 5 pieces going vertically and five
    pieces going horizontally. Trim the edges and pinch into
    the crust to seal.

    Cover pie with foil and bake in the middle of the oven
    for 1 hour. Remove cover. Continue baking for 15 minutes
    or until golden brown and bacon is crisp.

    Let pie cool for 1 hour before cutting.

    Makes a 9" pie (6 servings the way I cut it)
