MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Olive Oil Pie Crust
Categories: Pies
Yield: 2 Crusts
2 c Flour
1/2 ts Salt
1/3 c Olive oil
1/3 c Water
Mix flour and salt together. Mix in oil and water until dough balls
up. Don't overmix or else the dough will get tough.
If the dough doesn't ball up and leave the sides of the bowl, slowly
add more water until it does.
Dust your rolling surface. Coarse whole-wheat flour works better for
preventing the dough from sticking to the surface.
Using 1/2 the dough, roll out to a size just larger than the pie pan.
This dough is a little more elastic than shortening or lard dough, so
it will shrink slightly after you roll it.
Follow instructions on your pie recipe for baking temperature and
times.
Notes:
* Original recipe contained 1 tb sugar, and 1 1/2 tb vinegar.
I have no idea why.
* This crust is not as soft and flakey as a traditional pie crust.
The intention was to make it healthier by eliminating shortening.
