    Title: Breakfast Egg Muffins
    Categories: Pork, Vegetables, Cheese
    Yield: 12 servings

    1/2 lb Pork sausage
    12 lg Eggs
    1/2 c Chopped onion
    1/4 c Chopped green pepper
    1/2 ts Salt
    1/4 ts Garlic powder
    1/4 ts Pepper
    1/2 c Shredded cheddar cheese

    Set oven @ 350ºF/175ºC.

    In a large skillet, cook sausage over medium heat until
    no longer pink, breaking it into crumbles; drain.

    In a large bowl, beat eggs. Add onion, green pepper,
    salt, garlic powder and pepper. Stir in sausage and
    cheese.

    Spoon by 1/3 cupfuls into greased muffin cups. Bake
    until a knife inserted in the center comes out clean,
    20-25 minutes.

    Title: Double Chocolate Banana Muffins
    Categories: Chocolate, Cakes, Fruits
    Yield: 12 servings

    1 1/2 c A-P flour
    1 c Sugar
    1/4 c Baking cocoa
    1 ts Baking soda
    1/2 ts Salt
    1/4 ts Baking powder
    1 1/3 c Mashed ripe bananas
    1/3 c Oil
    1 lg Egg; room temp
    1 c Miniature semi-sweet
    - chocolate chips

    Set oven @ 350ºF/175ºC.

    Whisk together the first 6 ingredients. In a separate
    bowl, whisk bananas, oil and egg until blended. Add to
    flour mixture; stir just until moistened. Fold in
    chocolate chips.

    Fill greased or paper-lined muffin cups three-fourths
    full. Bake until a toothpick inserted in center comes
    out clean, 20-25 minutes. Cool 5 minutes before removing
    from pan to a wire rack. Serve warm.

    Optional streusel topping: Combine
