    Title: Favorite Banana Chip Muffins
    Categories: Breads, Fruits, Chololate
    Yield: 12 servings

    1 1/2 c A-P flour
    2/3 c Sugar
    1 ts Baking soda
    1/4 ts Ground cinnamon
    1/8 ts Salt
    1 lg Egg; room temp
    1 1/3 c Mashed ripe bananas
    1/3 c Butter; melted
    1 ts Vanilla extract
    1/2 c Semisweet chocolate chips

    Set oven @ 375ºF/190ºC.

    In a large bowl, whisk flour, sugar, baking soda,
    cinnamon and salt. In another bowl, whisk egg, bananas,
    melted butter and vanilla until blended. Add to flour
    mixture; stir just until moistened. Fold in chocolate
    chips.

    Fill greased or paper-lined muffin cups three-fourths
    full. Bake 17-20 minutes or until a toothpick inserted
    in center comes out clean. Cool 5 minutes before
    removing from pan to a wire rack. Serve warm.

    Title: Cranberry Muffins
    Categories: Breads, Fruits, Nuts
    Yield: 18 servings

    2 c A-P flour
    1 c Sugar
    1 1/2 ts Baking powder
    1 ts Ground nutmeg
    1 ts Ground cinnamon
    1/2 ts Baking soda
    1/2 ts Ground ginger
    1/2 ts Salt
    2 ts Grated orange zest
    1/2 c Shortening
    3/4 c Orange juice
    2 lg Eggs; room temp, lightly
    - beaten
    1 tb Vanilla extract
    1 1/2 c Coarse chopped cranberries
    1 1/2 c Chopped pecans

    In a large bowl, combine the flour, sugar, baking
    powder, nutmeg, cinnamon, baking soda, ginger, salt and
    orange zest. Cut in shortening until crumbly. In a small
    bowl, combine the orange juice, eggs and vanilla. Stir
    into dry ingredients just until moistened. Fold in
    cranberries and nuts.

    Fill 18 greased or paper-lined muffin cups two-thirds
    full. Bake @ 375ºF/190ºC until a toothpick inserted in
    the middle comes out clean, 18-20 minutes. Cool in pans
    for 10 minutes before removing to wire rack. Serve warm.
