    Title: Cascadilla
    Categories: Soups, Vegetarian
    Yield: 4 Servings

    1 Cucumber; chopped
    1 Scallion; chopped
    1 Clove garlic; crushed
    1 ts Honey
    1/4 ts Dill
    Salt and pepper
    4 c Tomato juice
    1 c Yogurt; (and/or sour cream)
    1 Sweet pepper; chopped
    Several fresh raw mushrooms;
    -thinly sliced
    Croutons
    Watercress

    Preparation time 15 minutes. It needs to chill.

    Combine and chill. Serve with croutons. Garnish with watercress.
