• Stepping down

    Hi everyone,

    I am stepping down as moderator and handing the care and feeding of COOKING, HOME_COOKING, and RECIPES to my good friend Mike Powell. Unfortunately, I
    am spending more time at the VA hospital now than I am at home. Couple that with the possibility of my right foot being amputated, I am concentrating
    more on my health and might not be able to spend the time I should as a moderator.

    I am not going anywhere, however, much to the conseternation of those who dislike me in Fidonet. <G>

    Thank you for giving me the opportunity to be moderator.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Vegetable Bean Soup
    Categories: Menu, Soup, Boat, Vegetarian, D/g
    Yield: 6 servings

    1 pk Knoor Vegetable Soup Mix
    4 1/2 c Water
    1 11.5 oz can vegetable juice
    1 Vegetarian Veg. Bouillon
    Cube (OR 2 beef bouillon
    Cubes)
    1/3 c Pasta Flakes *
    1 lb Frozen soup vegetables
    1/2 ts Celery seed
    1 tb Dried onion flakes
    1 cn Chick peas (drained)
    1 ds Tabasco (or to taste)
    Pepper/Salt to taste

    *Pasta Flakes can be found in Kosher section of grocery store. They
    are little squares of pasta.

    In 3 quart sauce pan, add water, vegetable juice, soup mix, and
    bouillon cube, bring to boil. Add pasta flakes, dried onions, celery
    seed, and frozen vegetables, lower heat and simmer slowly for 10
    minutes. Add drained chick peas and tabasco, pepper and salt to
    taste, heat and serve.

    For non vegetarian soup you can add left over beef or chicken if
    desired.

    NOTE: If pasta flakes are not available, use 1/2 leftover rice,
    or 1/2 cup macaroni (uncooked) cook according to package
    directions in soup.

    I'm trying. I am not healthy enough to have surgery right now but I am
    trying my best. I will still be around here though; you're not getting rid

    Title: The Best Blueberry Muffins
    Categories: Muffins, Fruits, Breakfast
    Yield: 12 Muffins

    1/2 c (1 stick) butter; at room
    -temperature
    1 c Granulated sugar; or slight-
    -ly less depending on tart-
    -ness of blueberries
    2 lg Eggs
    1 ts Vanilla extract
    2 ts Baking powder
    1/4 ts Salt
    2 1/2 c Blueberries; mash 1/2 cup
    -with a fork
    2 c All-purpose flour
    1/2 c Milk
    1 tb Sugar mixed with
    1/4 ts Ground nutmeg

    Heat oven to 375F. Grease 12 regular muffin cups, including the area
    between each cup, or use foil baking cups.

    In a medium-size bowl, beat butter until creamy. Beat in the sugar
    until pale and fluffy. Beat in eggs, one at a time. Beat in
    vanilla, baking powder and salt.

    Mix mashed berries into batter.

    Fold in half the flour with a spatula, then half the milk. Add
    remaining flour and milk. Fold in remaining blueberries.

    Scoop batter into muffin cups. Sprinkle with nutmeg sugar.

    Bake 25 to 30 minutes, or until golden brown. Let muffins cool at
    least 30 minutes in the pan before removing.

    There are no moderators in Fidonet, as messages are not screened
    or prescreened in any echo. Do try to keep up.

    You are a laugh riot, as shown by your messages. But that does mean
    anybody dislikes you in Fidonet. I mean, just because your possum
    recipes did not go all that well with the maddening crowd does not
    mean everybody hates you ... even if Pogo is no longer around.
