Title: King Edward Soup
Categories: Mushrooms, Vegetables, Rice, Herbs, Squash
Yield: 6 Servings

2 ts Olive oil
2 c Sliced mushrooms
1 1/2 c Chopped onion
2 cl Garlic; minced
1 1/2 c Fine chopped yellow squash
1 1/2 c Finely chopped zucchini
2 1/2 c Water
2 c Cooked long-grain rice
1 tb Fresh basil
6 Plum/Roma tomatoes; halved,
- sliced (about 3/4 lb)
21 oz (2 cans) beef consomm|-

Heat the oil in a Dutch oven over medium-high heat. Add
the mushrooms, onion, and garlic; saut|- for 6 minutes or
until tender. Add squash and zucchini; saut|- 5 minutes.
Add water and remaining ingredients; bring to a boil.
Reduce heat, and simmer 20 minutes or until the vegetables
are tender.

Yield: 6 servings (serving size: 1 1/2 cups)
