    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Palak Paneer
    Categories: Indian
    Yield: 4 -6

    1/4 c Butter; or less
    2 Red onions; finely chopped
    2 Cloves garlic; finely sliced
    2 md Potatoes; chopped
    1 ts Cumin seeds; crushed
    3 Cardamom pods; seeds only,
    -crushed
    4 Black peppercorns; crushed
    1 qt Vegetable stock
    2 tb Coconut milk
    1 tb Finely chopped mint
    2 tb Finely chopped parsley
    Cilantro
    14 oz Fresh spinach; coarsely
    -chopped, (or two 14 oz
    -cans, well drained.)
    1 Lime ; juice of
    Salt and freshly ground
    -black pepper to taste
    Crushed red hot pepper as
    -desired
    Paneer, cut into cubes

    Heat the butter in a large saucepan over medium heat.

    Add the onions, garlic, hot pepper, and potatoes. Saute over low heat
    for 5 minutes. It is OK that the vegetables are not done yet.

    Add the cumin, cardamom, and peppercorns. Cook for 5 minutes, stirring
    constantly.

    Pour in the stock and bring to a boil. Simmer over low heat for 20
    minutes.

    Add the coconut milk, mint, and parsley. Remove from the heat.

    Add the spinach and lime juice. Season with salt and pepper. Process
    the mixture in a food processor or blender until smooth. (I use an
    immersion blender in the pot.)

    Return the soup to the saucepan and reheat over low heat. Add paneer.

    Serve over basmati rice and garnish with cilantro.

    You've posted several good looking Indian recipes lately. Here is one
    that we have made and liked.

    We had to get rid of our instapot when we downsided couple years ago,
    but may well adapt to something else and try it again.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Instant Pot Keema (ground beef)
    Categories: Tested, Easy, Insta-pot
    Yield: 4 Servings

    2 tb Peanut oil
    1 ea Onion, finely diced
    4 ts Minced garlic
    1 ts Minced ginger
    1 ea Serrano pepper of green
    Chili minced.(Used one Red
    Thai pepper and seeds

    MMMMM---------------------------SPICES--------------------------------
    1/2 tb Mild madras curry powder
    1 tb Coriander powder
    1 ts Paprika
    1 ts Salt
    1/2 ts Black pepper
    1/2 ts Ground cumin
    1/2 ts Garam masala
    1/2 ts Tumeric
    1/4 ts Cayenne
    1/4 ts Ground cardamom

    MMMMM----------------------------MEAT---------------------------------
    1 lb Ground beef
    1 cn 14.5 oz can diced tomatoes
    Undrained
    2 c Fresh or frozen peas

    Press saute button. Add oil and onions and stir fry for 8 to 10
    minutes or until onions begin to brown.


    Add garlic, ginger, Hot pepper and spices to the pot. Stir fry for 30
    seconds then add ground meat and cook until it is mostly browned.

    Add the diced tomatoes and peas and mix well.

    Secure the lid, close the pressure valve and cook for 10 minutes at
    high pressure.

    Open the valve to quick release any remaining pressure.

    Press the saute button to reduce or boil off any extra liquid if
    needed.

    Garnish with cilantro if desired.

    Served over steamed rice.

    Nice flavor as is might increase spices next time. Will make often.
