    May 12 - National Nutty Fudge Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Nuclear Fudge
    Categories: Candy, Chocolate, Dairy, Nuts
    Yield: 64 Pieces

    16 oz Confectioners' sugar
    1/2 c Cocoa powder
    1/4 ts Salt
    1/4 c Milk
    1/2 c Butter; in four pieces
    3/4 c Chopped nuts
    1 ts Vanilla extract
    1 tb Butter; as needed for dish

    Mix sugar, cocoa powder, and salt in a microwave-safe
    mixing bowl. Pour milk over the sugar mixture. Arrange
    butter pieces atop the mixture, but do not mix into it.

    Heat in microwave for 2 minutes. Stir the mixture
    thoroughly and heat for 1 minute more; stir again.

    Fold nuts into the chocolate mixture; add vanilla and
    stir.

    Grease an 8" glass baking dish with butter. Pour batter
    into the prepared dish.

    Place batter in freezer until set, about 20 minutes.

    Title: Extremely Easy Fudge
    Categories: Five, Dairy, Chocolate, Nuts
    Yield: 25 Pieces

    12 oz (2 c) semi-sweet chocolate
    - chips
    14 oz Can sweetened condensed milk
    1 1/4 c Chopped, toasted nuts *
    1 ts Vanilla extract

    Grease a foil-lined 8" square pan.

    CONVENTIONAL METHOD: In a double boiler, melt chips and
    milk. Stir until smooth. Add nuts and vanilla.

    MICROWAVE METHOD: Melt chips with milk on 50 percent
    power, 3 to 5 minutes. Stirring once while cooking. Stir
    in nuts and vanilla.

    Pour into pan and chill until set.

    * As much as pecans are my favorite nut, walnuts always
    seem to do better in fudge.
