    Title: Skillet Eggplant Parmigiana
    Categories: Vegetables, Breads, Cheese, Sauces
    Yield: 4 servings

    2 lg Eggs
    1 1/2 c Italian-seasoned bread
    - crumbs
    1 md Eggplant; in 1/4" slices
    1/3 c Oil; divided
    28 oz Jar marinara sauce; divided
    1 1/2 c Shredded mozzarella

    Place eggs in a shallow dish and beat lightly. Place
    bread crumbs in another shallow dish.

    Dip eggplant slices in egg then place in bread crumbs
    and pat crumbs lightly onto both sides.

    In a large skillet, heat 2 tablespoons oil over medium
    heat until hot. Fry eggplant 1 to 2 minutes per side, or
    until golden, adding more oil as needed. Remove to
    platter.

    When finished frying eggplant, discard oil and place 3/4
    cup sauce in skillet. Layer with fried eggplant then
    spoon 3/4 cup sauce over eggplant and sprinkle with 1/2
    cup cheese. Repeat layers 2 more times, finishing with
    sauce and reserving 1/2 cup cheese.

    Cover and heat 12 to 15 minutes on medium-low heat.
    Remove cover and sprinkle with remaining cheese; cook 3
    to 5 minutes, or until cheese is melted. Serve
    immediately.

    Title: Simple Turkey One Pot
    Categories: Poultry, Breads, Mushrooms, Herbs, Vegetables
    Yield: 4 servings

    8 oz Pkg stuffing cubes
    1/2 c Hot water
    2 tb Butter; softened
    1 sm Onion; chopped
    4 oz Can sliced mushrooms;
    - drained
    1/4 c Sweetened dried cranberries
    3 lb Boneless turkey breast
    1/4 ts Dried basil
    1/2 ts Salt
    1/2 ts Black pepper
    6 Carrots; in 1" chunks

    Coat a 3 1/2 quart (or larger) slow cooker with cooking
    spray.

    Place stuffing cubes in cooker and add water, butter,
    onion, mushrooms, and cranberries; mix well. Sprinkle
    turkey breast with basil, salt, and pepper.

    Place turkey over stuffing mixture then place carrots
    around turkey. Cover and cook on low setting 7 to 8
    hours.

    Remove turkey to a cutting board, and slice. Place
    carrots on a serving platter. Stir stuffing until
    thoroughly mixed and allow to sit 5 minutes. Spoon onto
    platter with carrots and serve with sliced turkey.
