    April 25 - National Zucchini Bread Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Larry's Light Zucchini Bread
    Categories: Breads, Squash, Citrus, Nuts
    Yield: 1 Loaf

    3 lg Eggs
    3/4 c Oil
    1 1/2 c Sugar
    1 ts Lemon zest
    1/2 ts Orange extract
    1/4 ts Vanilla
    2 c Zucchini; grated
    2 1/2 c Flour
    3/4 ts Salt
    1/2 ts Cinnamon
    1/2 c Nuts
    2 ts Baking powder
    1/4 ts Ginger
    1 ts Soda

    Beat eggs, oil, and sugar together. Add flavorings and
    zucchini. Mix dry ingredients in next, stir in nuts.

    Bake in a floured loaf pan @ 350┬║F/175┬║C for 1 hr.

    Another of Larry's specialties. His favorite one.

    Title: Giles Family Blueberry-Zucchini Bread
    Categories: Breads, Fruits, Squash, Nuts
    Yield: 4 Servings

    3 c A-P flour
    1 ts Salt
    1 ts Baking soda
    1 ts Baking powder
    2 ts Ground cinnamon
    2 ts Vanilla extract
    3 lg Eggs
    1 c Oil
    2 c Grated zucchini
    1 c Chopped walnuts
    1 pt Blueberries
    1 1/2 c Sugar

    VARIATIONS: I usually use 1/2 cup whole wheat flour and
    2 1/2 cups all purpose. I have also substituted the oil
    for 1/2 cup butter and 1 cup apple sauce.

    Oven @ 325A°F/165A°C. Grease and flour two 8" x 4" pans
    or one 4 slot mini loaf pan.

    Sift flour, salt, baking powder, soda and cinnamon.

    Beat eggs, oil, vanilla and sugar in mixer. Add flour
    mixture and beat well. Stir in zucchini and nuts until
    combined and pour into prepared pans.

    Bake 30 - 60 minutes depending on pan size. Cool in pan
    on a rack for 20 minutes. Remove and cool completely
    before wrapping or storing.
