    Title: Sausage & Shrimp Panzanella Skillet
    Categories: Pork, Seafood, Vegetables, Cheese, Herbs
    Yield: 4 servings

    1 tb Olive oil, plus extra
    2 Italian sausage links
    1/2 lb Large cooked shrimp
    8 cl Garlic; crushed, coarse
    - chopped
    1 sm Sweet onion; diced
    14 1/2 oz Can diced tomatoes
    3/4 ts Salt
    1/2 c Fresh basil; coarse chopped
    8 oz Crusty sourdough; in
    - bite-sized pieces
    1/2 c Shredded Parmesan cheese

    In a large skillet over medium heat, heat 1 tablespoon
    oil. Add the sausages, cover, and cook about 5 minutes,
    or until cooked through. Add shrimp and cook just until
    hot, about 1 minute. Remove sausages and shrimp from the
    pan, cool sausages slightly before slicing into 1-inch
    pieces; set aside.

    Drizzle olive oil in hot skillet, then add garlic and
    onion. Cook until softened, 3-4 minutes. Add tomatoes,
    sprinkle with salt, add sausage, shrimp, basil, and
    bread. Stir to coat all ingredients with tomato mixture.
    Sprinkle with Parmesan cheese and serve immediately in
    shallow bowls.

    Title: Amish Ham & Cheese Casserole
    Categories: Pork, Dairy, Vegetables, Cheese
    Yield: 8 servings

    1/4 c Butter
    2 tb A-P flour
    1 1/2 c Milk
    1 lb Velveeta-type cheese; in
    - cubes
    16 oz Bag green beans; thawed
    30 oz (2 cans) whole potatoes;
    - drained, quartered
    4 c Diced cooked ham
    1 ts Onion powder
    1/2 ts (ea) salt & black pepper

    Set oven @ 375┬║F/190┬║C.

    Coat a 9" X 13" baking dish with cooking spray.

    In a soup pot over medium heat, melt butter; stir in
    flour until smooth. Add milk and cheese, and stir until
    thickened. Remove from heat and stir in remaining
    ingredients; pour into casserole dish.

    Bake 50 to 55 minutes, or until hot and bubbly.

    Title: Saveur's Chicken Cacciatore
    Categories: Poultry, Vegetables, Herbs, Wine
    Yield: 4 servings

    1/4 c Extra-virgin olive oil;
    - divided
    2 md Onions; fine chopped
    2 cl Garlic; fine chopped
    3 lb Chicken; in 8 pieces
    1 c Dry white wine
    28 oz Can whole tomatoes; chopped,
    - juice reserved
    1 c Chicken stock
    1/4 c Cup fine chopped parsley;
    - more for garnish
    1 ts Finely chopped fresh
    - rosemary leaves
    1 Bay leaf
    Salt & fresh ground pepper

    To a large cast-iron skillet set over medium-high heat,
    add 2 tablespoons of the oil and the onions and cook,
    stirring occasionally, until golden brown, about 10
    minutes. Add the garlic and cook, stirring frequently,
    for 2 minutes. Scrape into a small bowl and return the
    skillet to the stove.

    To the empty skillet, add the remaining oil and the
    chicken and cook, turning once, until evenly browned on
    both sides, about 8 minutes. Add the wine and cook until
    it has nearly evaporated, about 5 minutes. Add the
    tomatoes with their juices, stock, parsley, rosemary,
    bay leaf, and salt and black pepper to taste. Turn the
    heat to low and cook, partially covered, until the
    chicken is very tender and the sauce has thickened
    slightly, about 45 minutes. Sprinkle with more parsley,
    and serve.
