    Title: Oven-Roasted Prawns
    Categories: Seafood, Breads, Nuts, Vegetables
    Yield: 8 Servings

    3 Tomatoes; halved
    10 cl Garlic
    2 sl Crusty bread
    1 c Pecans
    1 Pimento or roasted red
    - pepper
    1/2 c Red wine vinegar
    3/4 c Olive oil
    1 ts Paprika
    2 ts Kosher salt
    3 tb Olive oil
    2 lb Prawns; shelled, tails
    - removed, heads on

    Set oven @ 450┬║F/230┬║C.

    Arrange the tomatoes, garlic, bread, and nuts on a baking
    sheet; roast for 10 to 15 minutes.

    Transfer to a food processor and pulse to roughly break up.
    Add the pimentos, vinegar, oil, and paprika. Pulse again
    until well combined, add salt. This sauce is best if allowed
    to rest so the flavors can meld (may be made a day in
    advance).

    Heat oil to almost smoking in a large skillet or roasting
    pan. Toss the prawns in half the sauce to coat, and pan sear
    them quickly in the oil just until barely opaque. Then
    roast for 10 to 12 minutes in a 450┬║F/230┬║C oven.

    Serve the remaining sauce on the side for dipping.

    Yield: 8 servings

    Title: Gerrity's Grocery Quick-as-a-Wink Pecan Pork
    Categories: Pork, Nuts, Citrus, Vegetables
    Yield: 4 Servings

    1/3 c All-purpose flour
    1 ts Salt
    1/2 ts Black pepper
    4 (6 oz ea) boneless pork loin
    - chops; pounded 1/4" thick
    6 tb Butter; divided
    1/4 c Fine chopped onion
    1/4 c Chopped pecans
    1/4 c Honey
    1/4 c Chicken broth
    1 ts Lemon juice

    In a shallow dish, combine flour, salt, and pepper.
    Dredge chops in mixture, shaking off excess.

    In a large skillet over medium heat, melt 2 tablespoons
    butter. Add chops and saute 5 to 6 minutes, or until
    brown on both sides. Remove to a platter and cover.

    Melt the remaining butter, add onions and pecans, and
    cook 5 to 6 minutes. Add remaining ingredients and cook
    3 to 4 minutes, or until hot and bubbly.

    Spoon sauce over pork chops and serve.

    Title: Arby's Grilled Chicken & Pecan Salad
    Categories: Poultry, Fruits, Nuts, Citrus
    Yield: 4 Servings

    1 c Diced red apple *
    1 tb Lemon juice
    2 1/2 c Grilled chicken breast;
    - diced 1/4"
    1 c Halved grapes
    1/2 c Chopped celery
    1 c Chopped pecans
    1/2 c (to 3/4 c) mayonnaise
    Salt & pepper
    Lettuce leaves; opt
    Thick-sliced wheat bread;
    - opt

    * I used a "Cosmic Crisp" apple which worked nicely.
    I have also used shredded rotissiere chicken. -- UDD

    Place the diced apples in a medium-sized bowl. Add one
    tablespoon of lemon juice and stir to coat the apples to
    prevent them from turning brown.

    Add the chicken, grapes, celery, and pecans to the bowl
    and mix well.

    Add 1/2 cup mayonnaise and stir to combine. If the
    mixture is too dry you can add another 1/4 cup of
    mayonnaise. Season with salt and pepper to taste.

    Allow the flavors to marry in a covered bowl in the
    refrigerator for about 1 hour before serving.

    If you would like to serve the chicken salad as a
    sandwich, place about 1 cup of chicken salad and a few
    lettuce leaves between two thick slices of wheat bread.

    NOTES: While Arby's does not toast their pecans, you
    could easily bring this salad to the next level by
    toasting the pecans in a skillet on medium-high heat
    until fragrant. Allow the pecans to cool completely
    before adding them to the salad.
