    April 13 - National Peach Cobbler Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Fresh Southern Peach Cobbler

    Yield: 4 servings

    8 Fresh peaches; peel, stone
    - slice in thin wedges
    1/4 c White sugar
    1/4 c Brown sugar
    1/4 ts Ground cinnamon
    1/8 ts Ground nutmeg
    1 ts Fresh lemon juice
    2 ts Cornstarch
    1 c A-P flour
    1/4 c White sugar
    1/4 c Brown sugar
    1 ts baking powder
    1/2 ts Salt
    6 tb Unsalted butter; chilled, in
    - small pieces
    1/4 c Boiling water

    MMMMM-----------------------MIX TOGETHER-----------------------------
    3 tb White sugar
    1 ts Ground cinnamon

    Set oven @ 425┬║F/220┬║C.

    In a large bowl, combine peaches, 1/4 cup white sugar,
    1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg,
    lemon juice, and cornstarch. Toss to coat evenly, and
    pour into a 2 quart baking dish. Bake in preheated oven
    for 10 minutes.

    Meanwhile, in a large bowl, combine flour, 1/4 cup white
    sugar, 1/4 cup brown sugar, baking powder, and salt.
    Blend in butter with your fingertips, or a pastry
    blender, until mixture resembles coarse meal. Stir in
    water until just combined.

    Remove peaches from oven, and drop spoonfuls of topping
    over them. Sprinkle entire cobbler with the sugar and
    cinnamon mixture. Bake until topping is golden, about 30
    minutes.

    Yield: 1 peach cobbler (serves 4)

    Title: Peach Cobbler Dump Cake
    Categories: Cakes, Desserets, Fruits, Nuts
    Yield: 15 servings

    30 oz (2 cans) sliced peaches in
    - extra-light syrup
    2 tb Brown sugar
    1 ts Ground cinnamon
    18 oz Box yellow cake mix
    3/4 c Sliced almonds
    1/2 c Cold butter

    Set oven @ 350ºF/175ºC.

    Pour 1 can of peaches into a greased 13" X 9" baking
    dish. Drain remaining can of peaches and add to baking
    dish; sprinkle with brown sugar and cinnamon. Sprinkle
    with cake mix and almonds.

    Cut butter into very thin slices; arrange over top,
    spacing evenly. Bake until golden brown and fruit is
    bubbly, 35-40 minutes. Serve warm.

    Title: Peach Cobbler

    Yield: 9 servings

    3/4 c A-P flour; divided
    1/2 c + 3 tb light brown sugar;
    - divided
    1 ts Ground cinnamon
    48 oz (3 cans) sliced peaches;
    - drained
    Cooking spray

    Set oven @ 350oF/175oC.

    Coat an 8" square glass baking dish with cooking spray.

    In a large bowl, combine 1/4 cup flour, 1/2 cup brown
    sugar, and cinnamon; mix well. Stir in peaches until
    evenly coated. Place in a prepared baking dish.

    In a small bowl, combine remaining flour and brown
    sugar; sprinkle over peach mixture.

    Coat the top with cooking spray and bake 25 to 30
    minutes, or until top is lightly browned. Spoon into
    individual serving dishes.
