    Title: Sloppy Josephs
Categories: Beef, Pork, Vegetables, Fruits, Breads
    Yield: 6 servings

    1 tb Bacon fat
    1 sm Yellow onion; diced
    1 1/2 lb Ground chuck
    1 1/2 c Ketchup
    1/4 c Water
    1/2 tb White vinegar
    2 tb Sugar
    3/4 tb Yellow mustard
    1/2 ts Kosher salt
    1/8 ts Coarse black pepper
    1/8 ts Paprika
    6 Sturdy hamburger buns or
    - rolls
    6 sl Applewood bacon; cooked
    1 Avocado; sliced
    6 Fried eggs

Heat a Dutch oven over medium heat with a tablespoon of
    bacon fat.

Saute the diced onion for 5 to 8 minutes until soft and
    translucent.

Add in the ground beef, use a wooden spoon to break up
the meat and cook for another 5-8 minutes or until
    browned and fully cooked.

Meanwhile in a bowl, combine the ketchup, water,
vinegar, sugar, mustard, salt, pepper and paprika. Whisk
    until blended and smooth.

Once the ground beef is fully cooked, drain off the fat
with a spoon and then pour in the ketchup mixture. Stir
and bring the sauce to a simmer, reduce to low, cover
and cook for 20 minutes, stirring occasionally.

Build the sandwich by scooping out about a 1/2 cup of
sloppy joe filling and place it onto the toasted bun.
Top with a slice of bacon that has been cut in half, a
few slices of avocado and a fried egg.
