    PREPARE AN AVOCADO SAFELY: You'll need a ripe avocado to properly
    prepare it. With a sharp medium to large knife, slice through the
    avocado from top to bottom, cutting around the stone, then twist to
    separate the two halves. To remove the stone, you should be able dig
    it out with a teaspoon if it's ripe enough. Now you can peel it – top
    to bottom is easiest.

    Title: Shrimp Cocktail w/Avocado
    Categories: Seafood, Fruits, Sauces, Citrus
    Yield: 4 Servings

    1/4 c Cocktail sauce *
    1/4 c Mayonnaise
    1 c Baby arugula leaves
    1 Avocado; in 8 wedges
    2 Radishes; thin sliced
    1 Lemon; in 8 wedges
    12 Fully cooked, peeled, and
    - deveined jumbo (U-24 size)
    - shrimp
    1/2 ts Salt-free Cajun seasoning **
    Crackers of choice

    Combine cocktail sauce and mayonnaise and spoon into the
    bottoms of 4 cocktail glasses.

    Evenly divide arugula, avocado, radish and lemon among
    each glass. Place 3 shrimp in each glass and evenly
    sprinkle with Cajun seasoning.

    Serve with crackers.

    * I make my own with Red Gold ketchup, Dixie horseradish
    and a dash (or two) of my YAAAAHHHOOOOAAAHHHH Hot Sauce.

    ** Benoit's Best Salt-free Cajun Seasoning is a good one
    as is Tony Chachere's No-salt. Or you can make your own
    with 1 ts (ea) cayenne and oregano stirred together
    with 2 ts thyme.
