Title: Zesty Skillet Turkey

Yield: 4 Servings
1 tb Olive oil
2 Turkey breast tenderloins;
- halved horizontally
1 c Salsa
1/4 c Raisins
1 tb Honey
1/2 ts Ground cumin
1/4 ts Ground cinnamon
1 c Water
1/4 ts Salt
3/4 c Quick-cooking couscous
1/4 c Slivered almonds; toasted
In a large skillet heat oil over medium-high heat. Add
turkey; cook about 2 minutes per side or until brown. In
a medium bowl stir together salsa, raisins, honey, cumin,
and cinnamon. Add to skillet. Bring to boiling; reduce
heat. Simmer, covered, for 10 to 12 minutes or until
turkey is no longer pink.
Meanwhile, in a medium saucepan bring the water and salt
to boiling. Stir in couscous. Cover; remove from heat.
Let stand for 5 minutes. Fluff with a fork before
serving. Serve turkey and salsa mixture over couscous;
sprinkle with almonds.
